Processes, qualities and new varieties of wine, three of the topics that will be covered at the Enomaq and Tecnovid 2013 conferences

In just a few days, the pavilions of the Zaragoza Trade Fair will once again be a hub of technology, innovation, and new proposals related to the wine, olive oil, and fruit and vegetable sectors. The ENOMAQ, OLEOMAQ, TECNOVID, OLEOTEC, and FRUYVER trade fairs return with even more content, both in terms of exhibits and the program of technical workshops.

As part of the event, an engaging program of activities will take place, including technical conferences that offer solutions and new products to improve the sector and contribute to its expansion and international positioning.

Designed specifically for this edition and developed in consultation with industry professionals, the ENOMAQ and TECNOVID technical workshops will outline the future trends in the market. Thus, on February 12 – the opening day of the conference – Hall 4 of the Congress Center will host an introduction to biodynamic viticulture and olive cultivation. This practice emphasizes the importance of the earth's cycles, the climate, and even the moon; it allows the vine to better express the characteristics of the soil and, in doing so, accelerate photosynthesis, resulting in improved wine and olive oil flavor.

"Validation of Enzyme-Based Methods Against a Reference HPLD Method: Application to Oenological Parameters" will be the focus of the session on Wednesday, February 13, in Hall 2 of the Congress Center, presented by expert Andreu Tobeña. Additionally, on February 14, the Catalan Cork Institute will take advantage of its presence at the Zaragoza Trade Fair to hold a standardization meeting regarding regulations related to cork.

Among the most anticipated events for professionals is the session on February 14th, which will delve into many topics, including methods for reducing the alcohol content of wine. The round table discussion will focus on closure systems: cork, synthetic, and screw caps. New grape varieties and rootstocks will also be covered, along with an analysis of sparkling wines, a designation with its own distinct name. To conclude the program, a colloquium on packaging will be held, in which experts will discuss the pros and cons of glass, cardboard, and bag-in-box.

One of the topics generating the most interest among experts is the session on February 13th, entitled "The Influence of Barrel Aging on Wine Quality." In this presentation, Kleopatra Chira, director of the Institute of Vine and Wine Sciences at the University of Bordeaux (France), will discuss new insights into the compounds extractable from oak and their organoleptic impact. She will present experimental results obtained from wines aged in oak barrels, oak chips, and oak staves. Finally, she will share her findings and compare the studies conducted using these three methods.

Following this, Dr. José Pascual Gracia Romero, a PhD in Chemical Sciences and oenologist, and Dr. María Pilar Sáenz-Navajas from the University of Burgundy will participate in a session on analysis for predicting wine color intensity and tannin quality. In the afternoon session on February 13, as part of ENOMAQ and TECNOVID, a new technique under development for wine aging using ultraviolet light, Vinoflux, will be presented.

On Thursday, February 14, a conference on cork—the perfect pairing from aperitif to after-dinner drink—is also scheduled. This conference will be led by Manel Pretel, director of the Catalan Cork Institute. Pretel will analyze five types of wines sealed with their respective cork types. The legal framework for professional associations in Spain and its application to the creation of regional associations of oenologists will be the topic of discussion, presented by lawyer Ángel Ramírez Ludeña of the Agudo Ramírez law firm.

In addition to the numerous presentations and conferences taking place during ENOMAQ and TECNOVID, the Zaragoza Trade Fair will host the "Winemaker's Corner" – located in Hall 5 – where tastings led by some of the world's best sommeliers and professionals will be held.

In short, during the second week of February, the Zaragoza Trade Fair will showcase products, machinery, projects, and innovations related to the wine sector. This unmissable event, centered in the Aragonese capital, is a benchmark for the wine market.
